Task 1.Each student writes a literature review of the phenotypical and physiological characteristics of Staphylococcus aureus, Bacillus cereus (emetic type and diarrhoeal type), Clostridium perfringens, Salmonella spp non typhoid and Campylobacter jejuni, and their original sources of contamination, mode of transmission, symptoms of illness and outbreak case of foodborne illness. The contents of the literature review must include all the following information: a)Phenotypical and physiological characteristics: Gram stain morphology, endospores presence or absence, optimum intrinsic and extrinsic parameters for bacterial growth. b)Original sources of contamination: Where is the original habitat of the bacterium, eg: environment, soil, air, water, humans, animals etc. c)Typical food source harbouring the pathogen: What type of food do you normally find this particular pathogen. d)Mode of transmission: How do you acquire the pathogen eg consumption of contaminated food with faecal matters e)Symptoms of illness: incubation period, onset time of illness, symptoms exhibited, duration of illness f)Two examples of the most recent outbreak cases that are associated with two different pathogens in your literature review.
